- In a medium saucepan heat the vegetable stock. Place carrots into a deep-frying pan and then add the butter, sugar, fennel seeds and stock. Season to taste.
- Simmer carrots uncovered over medium heat for 25-30 minutes or until carrots are cooked through and the liquid is reduced.
