Caramelised onions, pops of garlic and buttery puff pastry, this one-pan tart is both impressive and incredibly easy to make. It’s the perfect weekend treat.

Method

  1. Preheat the oven to 220°. Peel the onions and halve. Place the butter in a non-stick ovenproof pan on medium heat. Add thyme, brown sugar, vinegar and 100ml of water.
  2. Place the onion halves in the pan, peel and halve the garlic cloves and place in between the onion and season with salt and pepper.
  3. Cover and turn the heat down to low and leave to steam for 10 minutes to soften. Remove the lid and cook until the liquid caramelises.
  4. Place pastry over the onions, bake for 35 minutes, or until golden brown.
