- Preheat the oven to 220C. Bake falafel according to packet instructions.
- Combine yoghurt and half of the lemon juice in a small bowl. Place tomato, onion, parsley, mint, oil and remaining lemon juice in a bowl and toss to combine.
- Place lettuce and cucumber in a large dish. Top with tomato salad, falafel, and dressing. Serve with pita bread.
