Jazz up dinner with a Falafel Salad on the side! This nutritious dish will leave your kids with a smile on their face.

Method

  1. Preheat the oven to 220C. Bake falafel according to packet instructions.
  2. Combine yoghurt and half of the lemon juice in a small bowl. Place tomato, onion, parsley, mint, oil and remaining lemon juice in a bowl and toss to combine.
  3. Place lettuce and cucumber in a large dish. Top with tomato salad, falafel, and dressing. Serve with pita bread.
