Salad loving! Pack in your greens with this Green Goddess Salad with Chicken that is bursting with flavour and makes for a great easy lunch option!


  1. To make the dressing, blend all the dressing ingredients together in a blender until smooth and creamy. Allow to sit in the fridge until ready to use.
  2. Combine all the chicken ingredients in a bowl, marinating the chicken breasts. Heat 1 tbsp of olive oil in a pan over a medium-high heat. Cook the chicken until both sides are golden brown and cooked through. Once done, remove from the heat and allow to rest for 10 mins before slicing.
  3. Prepare the salad ingredients, then place in a large bowl or onto a serving platter. Add the sliced chicken on top, then drizzle over the coriander dressing. Enjoy!
