Salad loving! Pack in your greens with this Green Goddess Salad with Chicken that is bursting with flavour and makes for a great easy lunch option!
Ingredients
- SALAD
- 1 head cos lettuce
- ½ head butter lettuce
- ¼ cup fresh coriander
- ¼ cup fresh dill
- 1 cucumber, sliced
- 1 avocado, sliced
- 2 tbsp feta, crumbled
- CHICKEN
- 2 large chicken breasts
- ¼ cup olive oil
- 1 tbsp Dijon mustard
- 3 garlic cloves, minced
- ½ tsp salt & pepper
- DRESSING
- ½ cup fresh coriander
- ½ cup natural Greek yoghurt
- ¼ cup olive oil
- Juice of half a lime
- ¼ tsp salt
- ¼ tsp cumin
Method
- To make the dressing, blend all the dressing ingredients together in a blender until smooth and creamy. Allow to sit in the fridge until ready to use.
- Combine all the chicken ingredients in a bowl, marinating the chicken breasts. Heat 1 tbsp of olive oil in a pan over a medium-high heat. Cook the chicken until both sides are golden brown and cooked through. Once done, remove from the heat and allow to rest for 10 mins before slicing.
- Prepare the salad ingredients, then place in a large bowl or onto a serving platter. Add the sliced chicken on top, then drizzle over the coriander dressing. Enjoy!
