Our Quinoa Tabouli is as nutritious as they come! It’s packed with fresh produce like cucumber, cherry tomatoes and mint, and is full of healthy fibre and protein thanks to the quinoa.

Method

  1. In a medium saucepan over a high heat, bring quinoa, salt, and 1 ¼ cups of water to a boil. Once boiling, reduce heat to medium-low, then cover and simmer until the quinoa is tender (approx. 10 mins). Once the quinoa is tender, remove pan from heat and let sit, covered, for 5 mins before fluffing with a fork.
  2. While the quinoa is cooking, whisk together the lemon juice and garlic in a small bowl. Then whisk in the olive oil, and season to taste with salt and pepper.
  3. Once the quinoa has cooled, transfer it to a large bowl, then mix through ¼ cup of the dressing. Then add cucumber, tomatoes, parsley, mint, and spring onions to the bowl. Toss to combine. Season with salt and pepper, then drizzle over the remaining dressing before serving!
