Our Squash Vegetable Medley is a side dish to rival all others! Packed with squash, yellow capsicum, tomatoes and spring onion – it’s sure to be a hit with the family and visitors alike!
- Melt the butter in a fry pan over medium to high heat.
- Add the sliced squash and sauté for 2 – 3 minutes. Add in the capsicum and the spring onion, and continue to sauté until vegetables are just tender.
- Add the tomato, sugar, salt, and pepper, and cook for a further two minutes.
- Serve at once as a delicious side dish.
