- Bring a medium saucepan full of salted water to a boil. Steam the potatoes until just tender, around 15-20 mins. Once done, drain the potatoes and allow them to cool.
- To make the vinaigrette, whisk together the vinegar and olive oil, then season with salt and pepper, to taste.
- Heat half of the vinaigrette in a medium saucepan over a medium heat. Once hot, add the chicken and potatoes to the pan. Cook, stirring every so often until the chicken is warmed through (if using leftover chicken).
- To assemble the salad, arrange the lettuce on a platter. Arrange the chicken and potatoes over the top, then sprinkle with the chopped chives and drizzle over the remaining vinaigrette. Enjoy!
